Deliciously tender pancake bites infused with fresh blueberries and a hint of lemon, perfect for breakfast or dessert.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup blueberries
- Zest of 1 lemon
- Juice of 1/2 lemon
Instructions
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, egg, melted butter, lemon zest, and lemon juice.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Preheat a pan over medium heat and spray with cooking oil.
- Drop spoonfuls of the batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm and enjoy!
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for up to two months. Reheat gently.
