Description

Deliciously tender pancake bites infused with fresh blueberries and a hint of lemon, perfect for breakfast or dessert.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup blueberries
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, egg, melted butter, lemon zest, and lemon juice.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Gently fold in the blueberries.
  5. Preheat a pan over medium heat and spray with cooking oil.
  6. Drop spoonfuls of the batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for up to two months. Reheat gently.
