Description

A warm and comforting one-pot meal featuring tender chicken and rice infused with coconut milk and spices.


Ingredients

  • 2 cups rice
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) coconut milk
  • 2 cups chicken broth
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until softened.
  2. Add the diced chicken and cook until browned.
  3. Stir in the rice, coconut milk, chicken broth, thyme, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
  5. Fluff the rice with a fork and garnish with fresh cilantro before serving.

Notes

Use long or short grain rice based on your preference. Adjust cooking times and liquid amounts for different types of rice. This dish is forgiving and flavors improve with resting.
