Description

A comforting, easy-to-make medley of roasted vegetables topped with melted cheese, perfect for weeknight dinners or casual gatherings.


Ingredients

  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots, broccoli)
  • 1 cup shredded cheese (e.g., mozzarella, cheddar)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the mixed vegetables with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  5. Remove from the oven and sprinkle the shredded cheese over the hot vegetables.
  6. Return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
