Deliciously simple bars combining oats, peanut butter, and chocolate chips for a comforting treat.

- 1 1/2 cups rolled oats
- 1/2 cup flour (all-purpose or whole wheat)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup peanut butter (smooth or chunky)
- 1/2 cup brown sugar (packed)
- 1/4 cup honey or maple syrup
- 1/4 cup butter (softened)
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips (or regular chips)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a 9×9-inch baking pan with parchment paper.
- In a medium bowl, whisk together the rolled oats, flour, baking soda, and salt.
- In a separate large bowl, beat together the peanut butter, brown sugar, honey (or maple syrup), softened butter, egg, and vanilla extract until smooth.
- Gradually add the dry oat mixture into the wet ingredients and mix until just combined.
- Fold in the chocolate chips.
- Spread the batter evenly into the prepared baking pan.
- Bake for 18–22 minutes, or until the bars are golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan before slicing into squares.
Notes
These bars can be stored in an airtight container at room temperature for up to one week. They can also be frozen for up to three months.
