Description

A comforting and simple dish featuring pillowy gnocchi in a silky cream sauce with fresh spinach and feta cheese.


Ingredients

  • 500g gnocchi
  • 200g fresh spinach
  • 150g feta cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. In a large pot, boil water and cook the gnocchi according to package instructions until they float. Drain and set aside.
  2. In a large skillet over medium heat, heat the olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add fresh spinach and cook until wilted.
  4. Stir in the heavy cream and bring to a simmer.
  5. Crumble in the feta cheese and stir until melted and combined.
  6. Add the cooked gnocchi to the skillet, tossing gently to coat. Season with salt and pepper to taste.
  7. Serve warm, garnished with Parmesan cheese if desired.

Notes

For a lighter version, you can swap half of the heavy cream for milk. This recipe is also forgiving for make-ahead meals.
