Satisfying and easy-to-make roasted potato skins brushed with garlic and herbs, perfect as a starter or snack.

- 4 Russet potatoes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh herbs (rosemary, thyme, or parsley), chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the russet potatoes, then pierce them with a fork a few times.
- Bake the potatoes in the preheated oven for about 45 minutes, or until tender.
- Once cooked, let the potatoes cool slightly, then cut them in half and scoop out some of the insides, leaving a thin layer.
- In a bowl, mix olive oil, minced garlic, chopped herbs, salt, and pepper.
- Brush the potato skins with the garlic herb mixture.
- Place the skins on a baking sheet and bake for another 15-20 minutes, or until crispy.
- Serve warm as an appetizer.
Notes
These potato skins can be made ahead of time and reheated. They pair well with dips and can be served alongside salads or as part of a larger meal.
