Description

A comforting and easy-to-make chicken noodle soup infused with the warm flavors of ginger and garlic.


Ingredients

  • 2 chicken breasts
  • 4 cups chicken broth
  • 1 cup egg noodles
  • 2 tablespoons fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 celery stalk, sliced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender.
  2. Add the ginger and garlic, cooking for another minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken breasts and simmer until cooked through, about 15-20 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Add the egg noodles and cook until al dente.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions.

Notes

This soup is forgiving and can be customized with seasonal vegetables and different proteins. Ensure to add noodles just before serving to prevent them from becoming mushy.
