Description

Delightfully fluffy Greek Yogurt Pancakes that combine simplicity and comfort, perfect for breakfast or dessert.


Ingredients

  • 1 cup Greek yogurt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk (adjust for consistency)
  • Butter or oil for cooking
  • Maple syrup for serving

Instructions

  1. In a mixing bowl, combine Greek yogurt, eggs, and milk. Whisk until smooth.
  2. In another bowl, mix flour, baking powder, sugar, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If the batter is too thick, add a bit more milk.
  4. Heat a non-stick skillet over medium heat and add a little butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Remove and keep warm.
  7. Serve stacks of pancakes drizzled with maple syrup.
