- 1 cup Greek yogurt
- 1 cup all-purpose flour
- 2 large eggs
- 1 tablespoon baking powder

- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup milk (adjust for consistency)
- Butter or oil for cooking
- Maple syrup for serving
Instructions
- In a mixing bowl, combine Greek yogurt, eggs, and milk. Whisk until smooth.
- In another bowl, mix flour, baking powder, sugar, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If the batter is too thick, add a bit more milk.
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Remove and keep warm.
- Serve stacks of pancakes drizzled with maple syrup.
