Description

A comforting Irish Vegetarian Stew made with root vegetables, mushrooms, and grains, perfect for a cozy dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 parsnips, sliced
  • 2 potatoes, diced
  • 1 cup mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup green peas
  • 1 cup cooked grains (such as barley or quinoa)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and sauté until translucent.
  3. Add the carrots, parsnips, and potatoes; cook for about 5 minutes.
  4. Stir in the mushrooms and cook until softened.
  5. Pour in the vegetable broth and bring to a boil.
  6. Lower the heat and simmer for 15-20 minutes until the vegetables are tender.
  7. Stir in the green peas and cooked grains.
  8. Add thyme, parsley, salt, and pepper to taste.
