- 1/2 cup bell pepper, diced

- 1/4 cup lime juice
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1 cup cotija cheese (or feta cheese), crumbled
Instructions
- Cook the pasta according to package instructions until al dente. Drain and let cool.
- In a large bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Gently fold in the cotija cheese.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
Choose pasta shapes that hold onto the dressing well, like rotini or penne. For extra flavor, consider adding a pinch of cumin to the dressing. If using frozen corn, it works beautifully in this recipe.
