Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups mixed vegetables (bell peppers, broccoli, and carrots)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested

  • Fresh parsley for garnish

Instructions

  1. Cook the orzo according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and mixed vegetables to the skillet, cooking until veggies are tender, about 4-5 minutes.
  4. Stir in the cooked orzo, lemon juice, and lemon zest. Season with salt and pepper to taste.
  5. Cook for an additional 2 minutes to heat through.
  6. Serve hot, garnished with fresh parsley.
