- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1 cup tzatziki sauce (for serving)
Instructions
- Preheat the oven to 400°F (200°C) and set the oven rack in the middle position.
- Wash and halve the baby potatoes, patting them dry.
- Toss the potatoes with olive oil, garlic powder, oregano, salt, and pepper in a large bowl.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, flipping halfway through, until golden and tender.
- Transfer roasted potatoes to a serving dish, sprinkle with crumbled feta and parsley.
- Serve with tzatziki sauce on the side.
Notes
