- 2 cups fresh spinach, finely chopped
- 1 cup feta cheese, crumbled
- 1/2 cup almond flour
- 1 large egg
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the spinach, feta, almond flour, egg, olive oil, garlic powder, salt, and pepper until the mixture thickens and holds together.
- Scoop tablespoon-sized portions of the mixture onto the baking sheet, flattening them slightly.
- Bake for 15-18 minutes until golden and crispy, watching for edges to set and surface to turn lightly golden.
- Let cool for 5 minutes before serving.
Notes
These crisps pair well with yogurt dip, lemon, or fresh herbs. They can be refrigerated for 2-3 days or frozen for up to a month.
