- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil (Extra virgin recommended)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Smoked Paprika (Omit if preferred)
- 1 cup Feta Cheese (Goat cheese can be substituted)
- 2 tablespoons Honey (Maple syrup can be used)
- 2 tablespoons Parsley (Freshly chopped)
Instructions
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with parchment or lightly oil it.
- Wash and dry the sweet potatoes. Slice into rounds about 1/4 to 1/2 inch thick.
- Toss the rounds in a bowl with olive oil, salt, pepper, and smoked paprika.
- Arrange the slices on the baking sheet in a single layer.
- Roast on the middle rack for 20 minutes.
- Rotate the pan and check for light golden color. Continue roasting for 8 to 12 more minutes.
- Remove the baking sheet and let the rounds rest for 3 to 5 minutes.
- Scatter crumbled feta over the warm rounds.
- Drizzle the honey in a thin stream across the rounds.
- Sprinkle freshly chopped parsley and a final pinch of black pepper.
- Transfer to a serving plate and serve warm.
Notes
The recipe is forgiving; roast the rounds ahead and store them airtight. Add feta and honey just before serving to keep textures fresh.
