Description

Tender roasted sweet potato rounds topped with creamy feta, drizzled with honey, and finished with fresh parsley for a simple yet satisfying dish.


Ingredients

  • 2 large Sweet Potatoes
  • 2 tablespoons Olive Oil (Extra virgin recommended)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika (Omit if preferred)
  • 1 cup Feta Cheese (Goat cheese can be substituted)
  • 2 tablespoons Honey (Maple syrup can be used)
  • 2 tablespoons Parsley (Freshly chopped)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment or lightly oil it.
  3. Wash and dry the sweet potatoes. Slice into rounds about 1/4 to 1/2 inch thick.
  4. Toss the rounds in a bowl with olive oil, salt, pepper, and smoked paprika.
  5. Arrange the slices on the baking sheet in a single layer.
  6. Roast on the middle rack for 20 minutes.
  7. Rotate the pan and check for light golden color. Continue roasting for 8 to 12 more minutes.
  8. Remove the baking sheet and let the rounds rest for 3 to 5 minutes.
  9. Scatter crumbled feta over the warm rounds.
  10. Drizzle the honey in a thin stream across the rounds.
  11. Sprinkle freshly chopped parsley and a final pinch of black pepper.
  12. Transfer to a serving plate and serve warm.

Notes

The recipe is forgiving; roast the rounds ahead and store them airtight. Add feta and honey just before serving to keep textures fresh.
