- 4 medium sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 1/4 cup pure maple syrup
- 1 teaspoon cinnamon
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine sweet potatoes, olive oil, maple syrup, cinnamon, salt, and pepper. Toss until evenly coated.
- Spread sweet potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Remove from oven, let cool slightly, and garnish with fresh herbs if desired.
Notes
These sweet potatoes can be adapted by adding spices or herbs and make a comforting side or dessert. Store in the fridge for 3-4 days, or freeze for up to 2 months.
