- 1 lb (450g) Lo Mein, udon, or spaghetti noodles
- 1 lb (450g) boneless beef sirloin or flank steak, thinly sliced
- 1 tablespoon soy sauce (for beef marinade)
- 1 teaspoon cornstarch (for beef marinade)
- 4 cloves garlic, minced
- 1-inch piece ginger, peeled and minced
- 2 tablespoons avocado or canola oil, divided
- 1 medium head broccoli, cut into bite-sized florets
- 2 medium carrots, julienned
- 1 large bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- ½ cup low-sodium soy sauce (for stir-fry sauce)
- ¼ cup oyster sauce
- 2 teaspoons toasted sesame oil
- 1 tablespoon brown sugar, packed
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch (for stir-fry sauce)
- 2 green onions, thinly sliced (optional garnish)
- 1 tablespoon toasted sesame seeds (optional garnish)
Instructions
- Prepare the sauce by whisking together soy sauce, oyster sauce, sesame oil, brown sugar, rice vinegar, and cornstarch in a bowl. Set aside.
- Marinate the beef with soy sauce and cornstarch for 15 minutes.
- Cook noodles according to package directions, undercooking by 1 minute. Drain and rinse with cold water. Toss with sesame oil.
- Sear the marinated beef in a hot pan with 1 tablespoon of oil for 1-2 minutes per side. Remove from the pan.
- Stir-fry onions for 1-2 minutes, then add broccoli and carrots. Cook for 3-4 minutes.
- Add garlic, ginger, and bell peppers; stir-fry for another 1-2 minutes.
- Pour the prepared sauce over vegetables; stir until thickened.
- Add cooked noodles and seared beef, tossing to combine for 1-2 minutes until heated through.
- Serve garnished with green onions and sesame seeds.
Notes
For variations, try using chicken or shrimp instead of beef, and add seasonal vegetables. Keep prepped ingredients handy for fast cooking.
