Description

A comforting and simple dish of sweet potatoes glazed in butter and sugar, baked to perfection.


Ingredients

  • 3 sweet potatoes (about 1.5 lbs)
  • 5 tbsp salted Butter
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • ½ cup Brown sugar
  • ¼ cup granulated sugar
  • 1 tsp Vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and place a rack in the center.
  2. Peel, rinse, and slice the sweet potatoes into ½ inch to 1 inch thick circles.
  3. Grease a baking dish with butter.
  4. Melt the butter in a saucepan over medium heat, then reduce heat and add sugars, spices, and vanilla. Stir until glossy.
  5. Pour the mixture over the sweet potatoes and cover with foil.
  6. Bake for 45 minutes covered, then uncover, mix, and increase oven temperature to 425°F (220°C) for an additional 15 minutes.
  7. Allow to cool slightly and serve warm.

Notes

Adjust the spices and sugars according to personal preference. This dish can be made ahead of time and reheated gently.
