Description

Simple and comforting Spinach and Feta Quesadillas that balance soft cheese with bright spinach in a crispy tortilla.

Ingredients

Scale
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat until it shimmers.
  2. Add spinach and cook until wilted, stirring gently.
  3. Remove from heat and stir in feta cheese, salt, and pepper.
  4. On one half of each tortilla, place a portion of the spinach-feta mixture.
  5. Fold the tortillas in half and cook on the skillet until golden and crispy on both sides.
  6. Cut into wedges and serve warm.

Notes

For a lighter texture, use baby spinach. Adjust salt seasoning based on the saltiness of the feta.
