- 1 cup light brown sugar (packed)
- 1 cup vegetable oil (or melted butter)
- 4 large eggs
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large mixing bowl, whisk together the sugar, brown sugar, oil, and eggs until smooth.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined. Stir in the vanilla extract.
- Fold in the chopped pecans evenly.
- Spread the batter into the prepared pan. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool completely before slicing into squares.
- Enjoy the bread at room temperature or warm with coffee.
