Description

Tender cookies with a soft cocoa base and a creamy ganache center, perfect for celebrations or everyday treats.


Ingredients

Scale
  • Cookie Dough (Chocolate): ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • Cookie Dough (Pink): ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • Ganache Filling: ½ cup heavy cream
  • ¾ cup dark or white chocolate chips, finely chopped
  • 1 tablespoon butter (optional)
  • Toppings (optional): Freeze-dried raspberries, chocolate squares, heart sprinkles, melted white chocolate for drizzling

Instructions

  1. Prepare each dough flavor separately.
  2. Cream butter and both sugars until pale and fluffy. Add the egg and vanilla and beat until smooth.
  3. Stir in the dry ingredients until the dough forms and feels slightly tacky.
  4. Chill dough for 30 minutes.
  5. Wrap or cover the bowls and let the dough rest.
  6. Scoop dough into balls, press a well in each.
  7. Bake at 350°F for 10–12 minutes.
  8. Re-press centers after baking. Cool completely.
  9. Make ganache by pouring hot cream over chocolate, stir until smooth.
  10. Fill cookie centers with ganache and decorate as desired.
  11. Let set at room temp or chill briefly before serving.

Notes

Use room-temperature butter and eggs for best results. Substituting chocolate types can change flavor; adjust the cream temperature accordingly.
