- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- 1 lemon zest
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.
- In a large skillet, heat olive oil over medium heat. Add the spinach and sauté until wilted.
- In a bowl, combine ricotta cheese, lemon juice, lemon zest, salt, and pepper. Mix until smooth and slightly glossy.
- Add the cooked pasta and the ricotta mixture to the skillet with spinach. Toss to combine, adding reserved pasta water as needed to create a creamy consistency.
- Serve with grated Parmesan and fresh basil on top. Finish with a last pinch of black pepper and a little lemon zest if desired. Eat while warm for the best texture and flavor.
